Beef Chorizo Breakfast Burrito

Homemade beef chorizo sausage adds Southwest flavor to an already amazing breakfast food. This burrito is easy to make and perfect for an on-the-go meal. It can all be made in a 12-inch nonstick skillet and cooked ahead of time for a quick breakfast.

Ingredients:
  • 1 pound Certified Angus Beef ® ground beef, 80% lean
  • 1 tablespoon chili powder
  • 1 tablespoon paprika
  • 2 teaspoons cumin
  • 2 1/2 teaspoons kosher salt, divided 
  • 1 1/2 teaspoons coarse ground pepper, divided
  • 1 teaspoon dried oregano
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon allspice (optional)
  • 1 can (4 oz.) chopped green chilies
  • 1 tablespoon canola oil
  • 1 tablespoon plus 2 teaspoons butter, divided
  • 4 cups frozen hash browns
  • 4 eggs
  • 1 tablespoon milk
  • 1 cup shredded Monterey jack cheese
  • 4 (10 inch) flour tortillas
Instructions:
  1. MAKE SAUSAGE. Season ground beef with chili powder, paprika, cumin, 1-teaspoon salt, 1/2-teaspoon pepper, oregano, cinnamon and allspice; mix well to combine all ingredients.
  2. Preheat a 12-inch non-stick skillet to medium high and add seasoned beef in an even layer. Allow to brown for 2 minutes then begin to break up beef with a wooden spoon or spatula. Sear 6 to 7 minutes or until beef is thoroughly cooked through and browned. Mix in canned green chilies, transfer to a clean plate or sheet pan, keep warm.
  3. COOK HASH BROWNS. Add 1-tablespoon canola oil to pan and add hash browns in an even layer, season with 1-teaspoon salt and 1/2-teaspoon pepper. Sear 3 to 4 minutes and flip, adding 1-tablespoon butter if pan appears dry. Cook an additional 3 to 4 minutes until golden brown and crisp; transfer to a clean plate or sheet pan and keep warm.
  4. COOK EGGS. Melt 2-teaspoons of butter in the same non-stick pan over medium heat. Beat eggs with 1-tablespoon milk and season with 1/2-teaspoon each salt and pepper. Add eggs to pan and constantly stir as curds begin to form, cook 2 to 3 minutes and transfer to a clean plate or sheet pan and keep warm.
  5. ASSEMBLE BURRITOS. Microwave tortillas on high for 1 minute then assemble burritos. Place 1/4 of the cooked beef chorizo in the middle of a tortilla, top with 1/4-cup cheese, 1/4 of scrambled egg and 1/4 of the cooked hash browns. Take bottom edge of tortilla and fold it up to top edge, then pull it back toward yourself while applying a slight amount of pressure to keep it tight. Once a cylinder is formed, fold sides of tortilla in about 2 inches on both sides to create an envelope. While holding it firmly, finish forming burrito by rolling cylinder to top of tortilla. Repeat with remaining 3 tortillas.
