Slow cooked short ribs in a decadent beer sauce with just the right amount of acidity from the vinegar. This recipe is straight forward and simple but packs a ton of flavor into the braising liquid. You’ll love how the richness of the short rib shines through.

Ingredients:
  • 2 1/2 to 3 pounds1.1 kg to 1.3 kg Certified Angus Beef ® cross cut chuck short ribs, 1 1/2 inches3.81 cm thick
  • 1 tablespoon salt
  • 1 1/2 teaspoons pepper
  • 1 tablespoon light olive oil
  • 1 small yellow onion, sliced
  • 5 cloves garlic, finely minced
  • 2 tablespoons tomato paste
  • 1 (12-ounce354 ml) bottle dark beer like stout or brown ale
  • 1 cup unsalted beef broth
  • 1/2 cup balsamic vinegar
Instructions:
  1. Preheat oven to 300°F148.8°C. Season short ribs with salt and pepper. Heat a Dutch oven to medium high and add oil. Sear short ribs on at least 2 sides for about 3 minutes each, and then reserve to a clean plate; reduce heat to medium.
  2. Add sliced onions to Dutch oven and sear for 3 minutes or until they begin to soften. Add garlic and sauté an additional minute. Add tomato paste and cook another 2 minutes or until it begins to caramelize.
  3. Pour in beer, broth and balsamic vinegar, and bring to a simmer. Return short ribs to the pot and cover with lid. Place in oven and braise 3 hours or until fork tender.
