Air Fryer Ginger Soy Meatballs with Sesame Slaw

Sweet and savory Asian-inspired meatballs made healthier in the air fryer. Tender and juicy meatballs are served with a sesame and ginger slaw. These meatballs make a great appetizer or complete meal.

Ingredients:
  • 1 pound Certified Angus Beef ® ground beef, 80% to 85% lean
  • 1/4 cup Panko-style bread crumbs
  • 1/4 cup whole milk
  • 1 tablespoon plus 1 teaspoon finely minced fresh ginger
  • 1 tablespoon garlic, minced
  • 4 tablespoons brown sugar, divided
  • 1 1/2 teaspoons coarse kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon plus 2 teaspoons low sodium soy sauce
  • 1 bunch scallions, whites and greens separated, thinly sliced
  • 1 tablespoon rice vinegar
  • 2 teaspoons toasted sesame oil
  • 1 (14 ounce) bag shredded slaw mix
Instructions:
  1. In a large mixing bowl, combine bread crumbs, milk, 1-tablespoon ginger, garlic, 2- tablespoons brown sugar, salt, pepper and 2-teaspoons soy sauce. Sit 5 minutes to allow bread crumbs to soak in liquids. Add beef and scallion whites; mix to combine all ingredients. Portion beef into 12 balls about the size of a golf ball; refrigerate 10 minutes.
  2. Preheat air fryer to 350°F. In a medium mixing bowl, make the sesame dressing by combining remaining 1-teaspoon ginger, 2-tablespoons brown sugar, and 1-tablespoon soy sauce, rice vinegar and sesame oil; whisk to combine, set aside.
  3. Arrange meatballs in air fryer basket, so they aren’t touching each other. Air fry 12 minutes or until reaching an internal temperature of 155°F.
  4. While meatballs bake, combine slaw mix and scallion greens with sesame dressing.
  5. Serve meatballs with sesame slaw.
