In a small mixing bowl combine oregano, rosemary, thyme, dry mustard, salt and pepper. Rub mixture evenly on tenderloin roast and place on rotisserie. Cook at 300° F for 1 hour and 40 minutes to an internal temperature of 130° F.
Remove from rotisserie and allow to rest 10 minutes before slicing.
Chef's Note: this recipe is also excellent as a standard roast (without the rotisserie).
