Moroccan Spiced Sirloin Roast

Serves 4 - 6

Ingredients:

  • 1 (3-pound) Certified Angus Beef ® center-cut top sirloin roast
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1 tablespoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground clove

Instructions:

  1. Combine all spices in a small mixing bowl.
  2. Season roast evenly with the rub, cover with plastic wrap and refrigerate for at least one hour; overnight preferred.
  3. Preheat oven to 450°F and place roast in a roasting pan or on a wire rack in a sheet pan. Roast for 15 minutes, reduce heat to 325°F and cook for about 75 minutes or until the roast reaches an internal temperature of 135°F for medium doneness.
  4. Allow roast to rest for at least 10 minutes before slicing.
