Ingredients:
  • 1 pound Certified Angus Beef ® ground beef
  • 1 teaspoon canola oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 poblano pepper, diced
  • 1 red bell pepper, diced
  • 1 cup low-sodium beef stock
  • 3 tablespoons mole paste
  • 1 1/2 cups masa harina flour
  • 1 3/4 cups water
  • 2 teaspoons baking powder
  • 8 ounces whipped cream cheese
Instructions:
  1. Preheat oven to 375°F.
  2. Heat oil in a 10-inch cast iron skillet over medium high heat. Season ground beef with salt and pepper and sear in skillet until browned (about 5 minutes).
  3. Stir in onion, garlic, poblano and bell peppers; sauté 3 minutes.
  4. Stir in beef stock and mole paste, bring to a low boil and reduce heat to low. Simmer 3-4 minutes, stirring often until sauce slightly thickens. Remove skillet from heat and allow to cool about 10 minutes while making topping.
  5. In a mixing bowl combine masa, water, baking powder and whipped cream cheese. Masa topping should be slightly thicker than a batter and spreadable.
  6. Evenly place dollops of masa topping over beef mixture and gently spread to cover completely.
  7. Bake 45-50 minutes. Remove from oven and allow to set a minimum of 10 minutes before serving.
