Ingredients:
  • 8 ounces Certified Angus Beef ® filet of rib
  • 8 ounces ciabatta bread
  • 3 tablespoons olive oil
  • 1 teaspoon applewood smoked sea salt (or coarse kosher sea salt)
  • 1/2 teaspoon freshly cracked white pepper
  • 1/4 teaspoon coriander
  • 2 tablespoons minced shallot
  • 1 teaspoon orange zest
  • 1 tablespoon freshly squeezed lime juice
  • 1 tablespoon freshly squeezed orange juice
  • 1/2 teaspoon mustard seeds
  • 1 tablespoon minced flat-leaf Italian parsley
Instructions:
  1. Preheat oven to 400°F. Cut ciabatta into thin slices about 2-inches in diameter. Lay on a cookie sheet, brush with 2 tablespoons olive oil; sprinkle with 1/2 teaspoon salt, 1/4 teaspoon pepper and coriander on each (more or less to taste). Toast until golden, set aside to cool.
  2. In a small mixing bowl combine shallot, orange zest, juices, mustard seeds, remaining salt and pepper. Whisk in olive oil.
  3. Trim filet of rib steak completely and dice neatly in 1/8-inch cubes; place in a medium mixing bowl. Add vinaigrette and parsley to beef and combine well.
  4. Portion tartare onto eight plates and serve immediately with crostini.
