Creole Beef Rice Bowl

Bottom round steak cubes simmered until tender with Creole seasoning, onion, peppers, and stewed tomatoes then served over rice in a bowl. An easy skillet recipe with maximum flavor.

Ingredients:
  • 2 pounds Certified Angus Beef ® bottom round steak, cut into 1/2-inch cubes
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 1 large green bell pepper, seeded and diced
  • 4 stalks celery, sliced
  • 2 tablespoons tomato paste
  • 1 tablespoon dry Creole or Cajun seasoning
  • 1 (28-ounce) can stewed tomatoes
  • 1 1/2 cups long-grain white rice
Instructions:
  1. Season steak cubes with salt and pepper. Heat oil in 4-6 quart large heavy skillet or pot with lid; brown cubes in batches about five minutes.
  2. Remove browned steak cubes from skillet. Add onion, green pepper and celery; sear 3 minutes, stirring occasionally. Stir in tomato paste and Creole seasoning; sear another 2 minutes. Stir in reserved beef cubes, stewed tomatoes and 1/2-cup water. Bring to a boil, reduce to low heat, cover and simmer 1 hour.
  3. Prepare rice to package directions and serve with Creole beef.
