Ingredients:
  • 1/2 pound Certified Angus Beef ® ground sirloin
  • 8 medium Yukon potatoes
  • 1/4 cup vegetable oil
  • 2 tablespoons Cajun blackened spice
  • 1/4 head iceberg lettuce, shaved
  • 2 tomatoes, seeded and diced
  • 1 red onion, diced
  • 1/4 cup shredded sharp cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup sour cream
  • 3 bunches scallions, sliced thinly
Instructions:
  1. Roast potatoes until fork tender; cut in half lengthwise. Scoop out meat of potato, leaving 1/4-inch thickness on each skin.
  2. Cook ground sirloin in a frying pan until no pink remains. Drain and set aside.
  3. Heat oil in large frying pan. Fry skins flesh side down until crisp.
  4. Mix cooked beef and blackening spice and divide between the skins.
  5. Top with remaining ingredients and serve.
