Beef & Garden Vegetable Stir Fry

Serves 4

Ingredients:

  • 1 pound Certified Angus Beef ® bottom round steak
  • 6 tablespoons sesame oil
  • 4 green onions, chopped (including tops)
  • 1 tablespoon chopped garlic
  • 1 tablespoon chopped ginger
  • 2 tablespoons sake
  • 2 tablespoons rice wine vinegar
  • 2 medium carrots, peeled and cut into 1/4 inch x 2-inch strips
  • 1 medium yellow squash, cut into 1/4 inch x 2-inch strips
  • 4 ounces whole fresh green beans, snapped into 2-inch pieces
  • 1 tablespoon cornstarch dissolved in 1/4 cup water

Instructions:

  1. Cut steak across the grain into 1/4 inch x 2 inch slices. Prepare marinade by combining 2 tablespoons sesame oil, 2 green onions, garlic, ginger, sake and vinegar. Pour over meat in a zipper-locking plastic bag and marinate for 30 minutes.
  2. Remove beef from marinade using a slotted spoon; discard marinade.
  3. Heat a nonstick skillet to high. Add sesame oil and beef, stir-fry over high heat for 2 to 3 minutes. Add carrots, squash, green beans and remaining green onions, stir-fry for 3 to 4 minutes. Add cornstarch mixture, stirring constantly for an additional 2 to 3 minutes or until vegetables are crisp-tender.
  4. Serve immediately over chow mein noodles or cooked rice.
