Ingredients:
  • 1 1/2 pounds Certified Angus Beef ® ground beef 80% lean
  • 1 teaspoon coarse kosher salt
  • 1/2 teaspoon fresh cracked pepper
  • 2 tablespoons butter
  • 4 hamburger buns
  • 1/4 cup mayonnaise
  • 2 teaspoons white vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon celery salt
  • 2 1/2 cups shredded coleslaw mix
  • 12 ounces thin sliced deli pastrami, separated into 4 equal portions
  • 4 slices Swiss cheese
  • 1/4 cup spicy brown mustard
Instructions:
  1. Form ground beef into 4 (6-ounce) patties, season with salt and pepper; refrigerate.
  2. In large cast iron skillet, melt butter and toast the buns over medium heat; set aside.
  3. In medium mixing bowl whisk together mayonnaise, vinegar, sugar and celery salt. Stir in shredded coleslaw mix; set aside.
  4. Heat cast iron to medium high, add 2 burgers and 2 portions of pastrami piled high. While patties cook on first side, cook pastrami for 2 minutes, flip and cook another 2 minutes. Cook beef patties 4 minutes on first side.
  5. Flip burger patties and top each seared side with a slice of cheese and a portion of pastrami. Cover and cook 4 minutes or until the beef reaches an internal temperature of 160°F and cheese has melted. Repeat process for 2 more burgers.
  6. Construct burgers by spooning an equal amount of mustard on bun bottoms, top with cheeseburger patty, portion of pastrami, portion of slaw and top bun.
