Orange Ginger Top Round Roast

serves 8-10

Create a beautifully cooked interior and a slightly sweet outer crust when you make this delectable top round roast. Slowly roasting this cut of beef is key to tenderness.

Ingredients:

  • 4 pounds Certified Angus Beef ® top round roast
  • 1 tablespoon kosher or sea salt
  • 1 tablespoon brown sugar
  • 2 teaspoons dried orange peel
  • 1 1/2 teaspoons black pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon ginger powder
  • 2 teaspoons oil

Instructions:

  1. Roast in a preheated 450°F.
  2. In a small mixing bowl, combine salt, brown sugar, orange zest, pepper, coriander and ginger. Cover roast evenly with thin coat of oil followed by spice mixture. Place top round roast in a roasting pan fitted with a rack.
  3. Roast 15 minutes, drop oven temperature to 325°F and continue roasting an additional 70 minutes or until internal temperature reaches 125°F (for medium rare).
  4. Remove from oven and allow roast to rest 20 minutes, tented with foil. Slice thinly against the grain to serve.
