Miso Flank Steak and Udon Bowl

A delicious bowl of miso marinated flank steak, Japanese udon noodles, bean sprouts, and snow peas. Make this easy recipe for a healthy and satisfying meal loaded with flavor.

Ingredients:
  • 1 pound Certified Angus Beef ® flank steak
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons miso paste (white preferred)
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 7 ounces dry udon noodles (about 1/2 typical package)
  • 3 tablespoons butter
  • 6 ounces bean sprouts (about 2-cups)
  • 6 ounces sliced snow peas (about 2-cups)
Instructions:
  1. In a small mixing bowl whisk together soy sauce, honey, miso paste, rice vinegar and sesame oil. Place flank steak and 2-tablespoons of marinade in a large zipper locking bag, coat well and marinate refrigerated at least one hour. (Reserve remaining marinade for later.)
  2. Cook noodles according to package directions; set aside.
  3. Preheat grill to high. Remove flank steak from marinade, pat dry and discard excess marinade. Grill steak 5-7 minutes per side (until steak has reached 125°F internal temperature for medium rare); allow to rest for 5 minutes while finishing noodles and vegetables.
  4. Heat butter in a skillet over medium-high heat, sauté bean sprouts and snow peas for 2 minutes, add noodles and remaining marinade. Toss to combine.
  5. Thinly slice flank steak against the grain, toss with noodle mixture, and serve.
