Ingredients:
  • 1 pound Certified Angus Beef ® ground beef
  • 2 fresh sage leaves, chopped (1-teaspoon)
  • 4 sprigs fresh thyme, leaves stripped from stem and finely chopped (1-teaspoon)
  • 1 sprig fresh rosemary, needles stripped from stem and finely chopped (1-teaspoon)
  • 2 1/2 teaspoons kosher salt, divided
  • 1 teaspoon coarse black pepper, divided
  • 1/2 teaspoon red chili flakes
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon granulated onion
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup canola oil
  • 3 cups frozen diced potatoes
  • 1 small yellow onion, diced
  • 1 red bell pepper, diced
  • 6 fried eggs
Instructions:
  1. In a large mixing bowl combine ground beef, sage, thyme, rosemary, 1-teaspoon salt, 1/2-teaspoon pepper, chili flakes, garlic, onion and nutmeg; mix evenly.
  2. Heat a large skillet over medium-high heat and brown seasoned beef, breaking up into pieces as it cooks. Remove from pan to a clean plate and set aside.
  3. Add 2-tablespoons of oil to pan; add diced potatoes, remaining 1 1/2-teaspoons salt and 1/2-teaspoon pepper. Brown potatoes until they become golden and crisp. (Tip: this is a good time to fry your eggs in a separate skillet)

  5. Top with fried eggs and serve.
