Classic Steak Salad

Serves 6
Classic Steak Salad with spinach, green beans, and blue cheese is perfect for a summer meal. Make this crowd-pleasing salad recipe for a delicious dinner party.
  • 1 1/2 pounds Certified Angus Beef ® top sirloin or flat iron steak
  • 1 pound fresh green beans, trimmed
  • 8 ounces fresh spinach, washed and drained
  • 6 ounces sliced Kalamata olives
  • 6 ounces crumbled blue cheese
  • Olive oil to taste
  • Balsamic vinegar to taste
  • Salt and pepper to taste
  1. Preheat grill. Season steak with salt and pepper and grill to desired doneness. Allow steak to rest 5 to 10 minutes before slicing thinly across the grain.
  2. Blanch green beans in boiling water about 4 minutes or until they are bright green; drain.
  3. Arrange spinach leaves and beans on plates; top salad with 4 steak slices, olives and blue cheese. Drizzle with olive oil and vinegar. Season with salt and pepper.
