Frankfurters with Mango Mojo

Serves 4

Ingredients:

  • 4 Certified Angus Beef ® frankfurters
  • 1 mango, finely diced
  • 1 red, yellow or orange bell pepper, seeded and finely diced
  • 1 jalapeño, seeded and finely diced
  • 1/2 small red onion, finely diced
  • 1 tablespoon finely chopped cilantro
  • Juice of half a lime
  • Juice of half a lemon
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 4 gourmet buns

Instructions:

  1. Combine mango, peppers, onion, cilantro, juices, honey and salt.
  2. Preheat grill to medium high. Grill frankfurters until heated through.
  3. Serve frankfurters in buns with mango mojo.
