Black and Blue Burger

Serves 4
Cuisine: American
Category: Burgers, 30 minutes or less, On the Grill
Blackening seasoning gives the burger patty a little extra kick while the sharp and creamy blue cheese adds some complex flavors. Grilling the onion and toasting the buns are the finishing touches to this modern classic. You could either use a store-bought blackening spice or make your own.

Ingredients:
  • 1 pound Certified Angus Beef ® ground chuck
  • 1 tablespoon blackening spice
  • 1/2 teaspoon salt
  • 1 red onion, cut into rings
  • 4 ounces crumbled blue cheese
  • 4 tablespoons whole grain mustard
  • 4 leaves green leaf lettuce
  • 1 tomato, sliced
  • 4 hamburger buns
Instructions:
  1. Preheat grill to high. Portion ground chuck into four patties, season with blackening spice and salt.
  2. Place burgers and onion slices on grill; sear 3 to 5 minutes on the first side or until dark crust develops on burgers. Flip both burgers and sliced onion, top burgers with blue cheese, grill on second side for additional 4 to 5 minutes or until they reach internal temperature of 160°F.
  3. When onions are browned on second side, remove from grill. Add buns to grill to toast, 2 minutes or until golden brown.
  4. Construct burger. Spread whole grain mustard on bottom bun, add lettuce and sliced tomato. Top vegetables with blackened blue cheese patty and top with grilled onions.
