  • 1 pound Certified Angus Beef ® cooked meatloaf, crumbled
  • 1 (14-ounce) bag tortilla chips
  • 8 ounces shredded cheddar cheese
  • 4 ounces shredded smoked mozzarella
  • 1 bunch scallions, thinly sliced
  • 1 jalapeño pepper, diced small
  • 1 Hungarian hot pepper, diced small
  • 1 tomato, finely diced
  • 1 cup shredded Bibb lettuce
  • 1/4 cup sour cream
  1. Preheat oven to 300°F. Place tortilla chips on baking sheet. Top with crumbled meatloaf, cheese, scallions and peppers. Bake until cheese is melted, about 8 to 10 minutes.
  2. Remove from oven and place chips on serving tray. Top with tomato, lettuce and sour cream.
