Make a special weekday dinner with Tuscan Style Sirloin. A quick and easy recipe for tender steak medallions simmered in a skillet with onions, garlic, tomatoes, olives and rich brandy sauce.

Ingredients:
  • 2 pounds Certified Angus Beef ® top sirloin, cut into 3/4-inch medallions
  • 2 teaspoons black pepper, freshly ground
  • 1 tablespoon olive oil
  • 1 medium red onion, halved and thinly sliced
  • 3 garlic cloves, minced
  • 1/2 cup brandy
  • 1 (14-ounce) can coarsely chopped plum tomatoes
  • 1/2 cup sundried tomatoes in oil, cut into 1/4-inch strips
  • 2/3 cup pitted Kalamata olives, sliced
  • 1/2 teaspoon sugar
  • 2/3 cup chopped fresh parsley
Instructions:
  1. Season sirloin steak medallions with pepper.
  2. Broil steaks 3 inches from heat in an ovenproof skillet for 2 to 3 minutes per side.
  3. Add oil and onions to pan and sauté on cook top until onions begin to brown. Add garlic and sauté 2 to 3 minutes.
  4. Holding pan away from heat, add brandy and simmer 2 to 3 minutes. Add plum tomatoes, sundried tomatoes, olives and sugar; bring to boil. Reduce until thickened, about 4 minutes. Remove from heat.
  5. Stir in parsley and serve.
