Piquant Tomato Sauce

A deeply flavored sauce made with roasted tomatoes, sherry, garlic, and coriander. Make this easy Piquant Tomato Sauce recipe for roast beef, steak, meatballs, and pasta.

Ingredients:
  • 2 tablespoons olive oil
  • 1/3 cup yellow onion, finely diced
  • 6 garlic cloves, chopped
  • 1/3 cup sherry
  • 2 teaspoons coriander seeds, toasted
  • 3/4 cup chicken stock
  • 10 large Roma tomatoes, quartered and seeded
  • 1 teaspoon black peppercorns, cracked
  • 1 cinnamon stick
  • Salt and pepper to taste
Instructions:
  1. Preheat oven to 375°F. Place 1 tablespoon oil in saucepan over medium heat. Add onion and garlic, and sweat gently for 2 minutes. Deglaze with sherry. Add toasted coriander seeds and chicken stock. Bring to a boil, turn off heat and cover.
  2. Place tomatoes on sheet pan; rub with remaining oil and season with pepper. Roast for 10-15 minutes, or until tomato skins blister.
  3. Add tomatoes to stock mixture. Add cinnamon stick and bring to boil. Reduce heat and simmer gently for 5 minutes.
  4. Remove cinnamon stick. Purée sauce with hand blender or food processor. Use additional chicken stock to adjust consistency, if needed. Serve warm with prepared Certified Angus Beef ® brand cut.
