Make a quick lunch with this Southwestern Pita Pockets recipe. An easy homemade tomato-corn salsa with jalapeño packs loads of flavor in every bite.

  • 1 1/4 pounds Certified Angus Beef ® deli roast beef, cut into strips
  • 1/4 cup white vinegar
  • 3 tablespoons chopped fresh cilantro
  • 1 teaspoon olive oil
  • 1 cup whole kernel corn
  • 3 Roma tomatoes, seeded and diced
  • 1/2 cup thinly sliced green onions
  • 1 small jalapeño pepper, seeded and minced
  • 2 pitas, halved
  1. In a medium mixing bowl, combine 3 tablespoons of vinegar, 1 tablespoon cilantro and olive oil. Stir in roast beef.
  2. Combine corn, tomatoes, green onions, jalapeno peppers and the remaining vinegar and cilantro in a separate bowl.
  3. Place dressed roast beef in pita pockets; top with salsa and serve.
