Quesadillas Con Carne

Serves 4
Quick and flavorful quesadilla using ground beef and mostly pantry ingredients.
  • 1 pound Certified Angus Beef ® ground beef, 80% lean
  • 1 teaspoon Adobo seasoning
  • 1/2 cup sour cream
  • 2 teaspoons chipotle in adobo, finely chopped
  • 2 tablespoons butter
  • 4 large (10-inch) flour tortillas
  • 12 ounces (3 cups) shredded Mexican blend cheese
  • 1 (4-ounce) can green chilies, drained of excess liquid
  • 1 bunch Fresh cilantro for garnish (optional)
  1. In a mixing bowl combine ground beef with Adobo seasoning and cumin; hand mix
  2. In a small mixing bowl stir together sour cream and chipotle.
  3. Preheat a large non-stick or cast iron pan to medium high. Add ground beef in a thin even layer, sear for 2 to 3 minutes without stirring. Flip beef, searing 2 to 3 more minutes or until no pink remains. Begin to chop up using a heat proof spatula. Transfer beef to a clean bowl and keep warm.
  4. Drain remaining fat from the pan, wipe clean with a paper towel. Add 1/2-tablespoon butter over medium heat, add tortilla. Spread 1/4 of the cheese (3 oz.) over the entire tortilla, cover half of tortilla with 1/4 of the cooked beef (about 3 oz.) and 1/4 of the green chilies. Cook 3 to 4 minutes, or until cheese is melted and tortilla is golden brown. Fold and lightly press cheese half over beef and chilies.
  5. Repeat with remaining tortillas, serve with chipotle sour cream and cilantro.
