Quesadillas Con Carne

Yields 32 pieces
Use pre-cooked pot roast to make a flavor-packed appetizer or meal with this easy Quesadillas Con Carne recipe. Delicious Tex-Mex finger food for any festive occasion.
  • 1 (24-ounce) package Certified Angus Beef ® precooked pot roast
  • 1 cup tomatoes, seeded and diced
  • 1/2 cup frozen corn
  • 1 (4.5-ounce) can chopped green chilies
  • 1 cup frozen shredded hash brown potatoes
  • 1 tablespoon adobo seasoning
  • 1 tablespoon minced fresh cilantro
  • 8 (8-inch) flour tortillas
  • 8 ounces Mexican cheese blend
  • Sour cream for garnish
  • Salsa for garnish
  1. Combine pot roast, tomatoes, corn, chilies, potatoes, adobo and cilantro in a medium sauce pan and heat.
  2. In a large nonstick skillet, heat a flour tortilla; flip and top with cheese and a quarter of meat mixture. Top meat mixture with cheese and flour tortilla. Turn over and cook for 3 minutes. Repeat until all tortillas are filled.
  3. Cut into 8 pieces each. Serve with sour cream and salsa.
