Peppercorn Crusted Tri-tip with Caramelized Onion and Blue Cheese

Serves 6
Impress your guests with tender, juicy peppercorn-crusted tri-tip steak topped with caramelized onion and blue cheese. A perfect recipe for an elegant dinner party or holiday meal.
  • 2 1/2 pounds Certified Angus Beef ® tri-tip steaks
  • 1/4 pound butter
  • 8 cups thinly sliced sweet onions
  • 1/4 cup brown sugar
  • 1 cup apple juice concentrate
  • Olive oil, as needed
  • 2 cups beef demi glace
  • 1/2 cup red wine, reduced by half
  • 1/3 cup blue cheese, crumbled
  • Salt and coarsely cracked black pepper to taste
  1. Melt butter in large sauté pan, add onions and cook until transparent. Lower heat; add brown sugar and cook for 10 minutes. Add apple juice and cook until liquid is reduced and onions are a caramel color. Keep warm.
  2. Preheat oven to 350° F. Brush tri-tip steaks with olive oil and dredge in cracked black pepper. Heat large sauté pan and sear steaks in small amount of olive oil on both sides. Transfer to a sheet pan and place in oven for 5 to 10 minutes or to desired doneness.
  3. Combine demi glace and reduced wine; heat. Season with salt and pepper as needed.
  4. Place sauce on plate and top with steak, caramelized onion and blue cheese.
