Garlic & Rosemary Roast

Serves 12 as an entrée; 30 as an appetizer


  • 1 (5-pound) Certified Angus Beef ® tenderloin or split strip roast
  • 1/2 teaspoon powder garlic
  • 3/4 teaspoon dried rosemary, crushed
  • 2 teaspoons Kosher salt
  • 1/2 teaspoon ground pepper
  • 2 tablespoons olive oil


  1. Preheat oven to 350°F. Combine garlic, rosemary, salt and pepper in small mixing bowl.
  2. Brush roast with olive oil and season with remaining ingredients.
  3. Place roast on a rack in shallow roasting pan. Roast for 30 minutes. Reduce temperature to 325°F and roast an additional 45 minutes or to desired doneness. Cover with foil part of time if tenderloin begins to get too dark.
  4. Remove from oven; allow to rest 15 minutes before slicing.
  5. For an entrée, cut into 2 1/2-inch slices. For a great appetizer, wrap tenderloin tightly with plastic wrap and cool completely in refrigerator. Slice thinly and serve with toasted French bread and horseradish sauce.
