Top Round Roast
The split strip roast comes from cutting a whole strip loin lengthwise, instead of into strip steaks. The two resulting long roasts are similar in shape to tenderloin, but boast the robust flavor and substantial texture of strip steak. Best when cooked whole, then sliced.
