Orange Beef with Broccoli Stir-Fry

Serves 4

Ingredients:

  • 1 pound Certified Angus Beef ® bottom round steak, trimmed and cut into 1/4-inch thick slices, then into 2-inch long pieces
  • 2/3 cup orange juice
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon orange zest
  • 1 tablespoon oyster sauce
  • 2 teaspoons toasted sesame oil
  • 4 cups broccoli florets (about 12-ounces)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 2 tablespoons canola or peanut oil
  • 1 red bell pepper, seeded and sliced into strips
  • 2 green onions, white and green part, thinly sliced
  • 2 teaspoons minced fresh ginger
  • 2 teaspoons minced garlic
  • Prepared rice for four, cooked to package directions

Instructions:

  1. Make orange sauce by whisking together orange juice, soy sauce, cornstarch, orange zest, oyster sauce and sesame oil in a medium bowl; set aside.
  2. Prepare rice and keep warm.
  3. Bring 2/3 cup water to a boil in a wok or large frying pan; add broccoli. Stir to steam cook broccoli until water evaporates. Transfer broccoli to a clean bowl; wipe pan clean with a paper towel and return to high heat.
  4. Season beef with salt and pepper. Add 1-tablespoon canola oil to the pan. Add beef (in two batches) and stir-fry just until it no longer looks raw; remove from pan.
  5. Add remaining oil to the pan followed by bell pepper, garlic, ginger and green onions; stir-fry 2 minutes. Return the beef and broccoli to the wok; cook 30 seconds. Add the sauce mixture; cook and stir until sauce thickens. Serve immediately with prepared rice.
