Cajun spiced ball tip steaks grilled, sliced, and served on top of buttery pasta. It's a recipe for a delightful and satisfying summer meal.

Ingredients:
  • 2 pounds Certified Angus Beef ® ball tip steaks (3/4-inches thick)
  • 2 teaspoons paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon fennel seeds, crushed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 1/2 teaspoons red pepper flakes, divided
  • 1/4 teaspoon cayenne
  • 1 pound fettuccine
  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • 1/2 red onion, minced
  • 1 pint cherry tomatoes
  • 1 tablespoon chopped parsley
  • 1/2 cup Parmesan cheese
Instructions:
  1. Combine paprika, Italian seasoning, black pepper, salt, fennel seeds, garlic powder, onion powder, 1/2 teaspoon red pepper flakes and cayenne to create an herb rub. Sprinkle both sides of steaks with seasoning and rub into the surface. Cover with plastic wrap and refrigerate two hours or overnight for bolder flavor.
  2. Cook pasta according to package directions; drain well. Melt butter in large skillet; add garlic, red onion and remaining red pepper flakes. Simmer until tender; stir in tomatoes. Remove from heat and toss with Parmesan and parsley. Add pasta and toss to coat.
  3. Place steak on grill over medium-high heat. Grill to desired doneness (125-130°F for medium rare) Transfer steak to cutting board and allow to rest 5 minutes. Slice across the grain into thin strips.
  4. Top fettuccine with Cajun steak strips.
