Sliced Roast
Rotisserie Herb Tenderloin Roast recipe provided by the Certified Angus Beef® brand.

Rotisserie Herb Tenderloin Roast

Serves 9 (4-ounce) servings

Ingredients:

  • 1 (3-pound) Certified Angus Beef ® tenderloin roast
  • 1 tablespoon dried oregano leaves
  • 3 teaspoons dried rosemary, crushed
  • 1 tablespoon dried thyme
  • 1 teaspoon dry mustard
  • 1 teaspoon coarsely ground black pepper
  • 2 teaspoons coarse kosher salt

Instructions:

  1. In a small mixing bowl combine oregano, rosemary, thyme, dry mustard, salt and pepper. Rub mixture evenly on roast and place on rotisserie. Cook at 300°F for 1 hour and 40 minutes to an internal temperature of 130°F.
  2. Remove from rotisserie and allow to rest 10 minutes before slicing.
  3. Chef’s Note: this recipe is also excellent as a standard roast (without the rotisserie).
