Hearty Beef Soup

Serves 4


  • 1 pound Certified Angus Beef ® round steak (1/2 inch cubes)
  • 1 tablespoon vegetable oil
  • 2 (13.5-ounce) cans beef broth
  • 2 (14.5-ounce) cans diced tomatoes
  • 1 medium carrot, sliced
  • 1 small onion, chopped
  • 1 stalk celery, sliced
  • 2 cups water
  • 6 ounces farfalle or rotini pasta
  • 1 (15-ounce) can black-eyed peas, drained
  • Salt and pepper to taste


  1. In large saucepan or Dutch oven, heat oil over medium-high heat, add beef and brown stirring constantly.
  2. Add beef broth, tomatoes, carrot, onion, celery and water; bring to boil. Add pasta and cook over medium heat, stirring frequently for 8 to 10 minutes, or until pasta is tender.
  3. Add black-eyed peas; simmer an additional 5 minutes. Season with salt and pepper to taste; serve.
