From the Chef
Brisket Wrap w/Cherry SalsaFeast on great flavor in the great outdoors!

Whether you’re camping with the family or backpacking through rugged terrain, camp cooking doesn’t have to be boring or pre-packaged. Many spectacular recipes can be transformed for open fire cooking. Just be sure to pack a Dutch oven or grill rack.

  • A pot of campfire beans is delicious, but kick it up several notches with a few spices and fresh Certified Angus Beef ® brand cuts. Make our Beef & Beans recipe. Follow instructions, but prepare the beans in a Dutch oven and cook over the coals until bubbly.

  • Choose your favorite cut for campfire grilling. Light the fire about 30 minutes before cooking, so coals are hot. Place beef on a grill rack or cast iron griddle above the fire until it reaches desired doneness. A meat thermometer will come in handy.

Campfire Potatoes

For quick cooking, coat heavy-duty aluminum foil with cooking spray. Slice a baking potato, season with salt, pepper and minced garlic. Place a tablespoon of butter on top. Wrap in foil and bury in hot coals for 15-20 minutes.

Hearty Dish with Gourmet FlairSouthwestern Steak

Make Southwestern Steak, Black Beans and Rice in the great outdoors. With a little pre-planning this meal will come together quickly. Follow cooking instructions, but adjust slightly for your outdoor environment:

  • Grill steaks as directed, but prepare over the fire on a grill rack.
  • Spices can be pre-mixed and stored in a zipper-locking bag or small container until needed.
  • Use a quick-cooking rice, prepared in water boiled over the fire.
  • Don’t forget the can opener for the tomatoes and black beans.

Leftovers?
Store in a cooler until lunch the next day. Place several spoonfuls of the mixture on a flour tortilla, wrap and enjoy cold. Or, heat mixture in Dutch oven over the fire, spoon onto tortilla, sprinkle with shredded cheese, wrap and enjoy!
