Roasting Instructions
Preheat oven to 500 degrees.
Season roast heavily with salt and freshly ground black pepper.
Place roast on a wire roasting rack, fat side up.
Place pan and roast in preheated oven.
Insert oven-proof thermometer into the thickest part of the roast.
After about 15 minutes, reduce oven temperature to 275 degrees.
Continue to roast until desired doneness. (See Degree of Doneness chart for corresponding temperatures.)
Remove roast from oven and tent with aluminum foil.
Allow roast to rest for 10-15 minutes to redistribute the juices.
Slice roast against the grain.
Serve.
