- Preheat oven to 500 degrees.
- Season roast heavily with salt and freshly ground black pepper.
- Place roast on a wire roasting rack, fat side up.

- Place pan and roast in preheated oven.
- Insert oven-proof thermometer into the thickest part of the roast.
- After about 15 minutes, reduce oven temperature to 275 degrees.

- Continue to roast until desired doneness. (See Degree of Doneness chart for corresponding temperatures.)
- Remove roast from oven and tent with aluminum foil.

- Allow roast to rest for 10-15 minutes to redistribute the juices.
- Slice roast against the grain.
- Serve.
